How did I learn to make egg bites?

These were quickly becoming one of my favorite breakfast foods at the time, but I realized the price I was paying was more expensive than if I were to make them at home. I loved the creativity of making different flavors and I settled with Roasted Tomato and Bacon as the hit of my household. Breakfast is my favorite meal so I am always testing recipes that I can make in the morning!

Do you need a quick and delicious breakfast in the morning? These egg bites are inexpensive, simple, and can make a great meal prep breakfast on the go!

Ingredients

  • 12 Eggs – One Dozen

  • 4 Strips of Cooked Bacon

  • Roasted Cherry Tomatoes

  • 1 Cup Cottage Cheese

  • 1 Teaspoon Salt

  • 1 Teaspoon Pepper

Directions

  • Start by Preheating your oven to 350° Fahrenheit, (175° Celsius), and while that is preheating grease your muffin tin with olive oil. I spread mine with a basting brush.
  • In a large bowl mix together your eggs, bacon, tomato, and cottage cheese. Add in your salt and pepper, and mix well.
  • Fill your greased muffin tins about 1/2 full.
  • Bake at 350° Fahrenheit for 20-22 minutes
  • Take them out of the oven, and let them cool for 5-10 minutes
  • Scoop them out and serve warm!
  • You can also freeze these and then warm them up on the go! I microwave 2 at a time for 1.5 minutes
  • Enjoy your breakfast!
